Flatbread with Summer Fruit and Herbs

- Measuring Cups
- Measuring Spoons
- Cutting Board
- Chef’s Knife
- Mixing Bowl
- Rolling Pin
- Cast Iron or Heavy-Bottomed Pan
Ingredients
- 1 cup all-purpose flour
- ¼ teaspoon salt
- ⅓ cup olive oil
- ⅓ cup water
- 3 ripe peaches, cut in half and sliced
- 1 handful of fresh basil, freshly chopped
- ½ cup goat cheese
Directions

Combine ingredients
Combine flour and salt in a medium mixing bowl.

Add oil and water
Create a well in the center, add oil and water, and stir to combine.

Knead dough
When the dough starts to come together, dump it onto the counter and knead for 5 minutes (set a timer!).

Divide dough
Divide dough into quarters.

Roll into flatbread
Working with one piece of dough at a time, roll out into a thin flatbread. ⅛-¼ inch in thickness.

Heat pan or skillet
Heat a heavy-bottom pan or cast-iron skillet on the stove over medium heat.

Cook and flip
Place in a hot pan (no oil needed) and flip after 10 seconds.

Continue to cook and flip
Continue to flip bread regularly in the pan until it puffs up and begins to brown.

Remove and cool
Remove from heat and place on a wire rack to cool.

Cook additional dough
Repeat steps 5-9 with the remaining dough.

Prepare toppings
While flatbread cools, prepare toppings.

Assemble
Assemble, sprinkle goat cheese, peach slices, and freshly chopped basil.

Drizzle oil and honey
If desired, drizzle with olive oil or honey for extra sweetness.
